BBQ’d ELK Ribs

3 lbs ELK ribs
1 medium onion
¼ cup vinegar
2 Tbsp brown sugar
1 cup ketchup
½ cup water
1 Tbsp Worcestershire sauce
½ cup dried celery
1 tsp salt
Dash of cayenne pepper

Cut the ribs in pieces of serving size. Place them in a baking dish. Peel and slice the onion and place over the ribs. Combine the vinegar, brown sugar, Ketchup, water, Worcestershire sauce, cayenne, celery and salt. Mix until well-blended and pour over ribs. Cover the pan and cook in a moderate 350°F oven for about 1½ hours, or until ribs are tender. Serve hot with sauce.
